伊拉姆的高海拔與獨特的微氣候,讓咖啡櫻桃在雲霧繚繞中緩慢成熟,孕育出更緊實的種子與層次豐富的風味。這片土地的風土(terroir)彷彿為水洗處理而生,完美展現伊拉姆的清新與細膩,讓每一顆豆子都訴說著山林間的靜謐與純淨。



處理工藝的魔法


這款豆子採用經典水洗法,結合科學的時間掌控與純淨的山泉水,打造出無與倫比的清晰與平衡:


1. 精選收穫:只挑選完全熟透的紅櫻桃,手工採摘並以浮選法篩選,剔除未熟或瑕疵的果實,確保品質一致。


2. 去果肉:採收後立即剝去果皮與果肉層,讓豆子露出純粹的內核。


3. 水浸發酵:將豆子浸入純淨水箱中,靜置24–36小時,讓果膠層在自然發酵中緩緩分解。


4. 徹底清洗:發酵後以清泉反覆沖洗,去除殞地果膠,保留豆子的純淨本色。


5. 日曬乾燥:洗淨的豆子被小心翼翼地攤放在高架乾燥床上,分層排列,每日多次輕柔翻動,避開正午烈日。乾燥過程歷時18–22天,直至水分穩定在10–12%,鎖住最佳風味。

Chapter 3 : Fikkal Washed Bourbon


From the mist-shrouded Himalayan highlands of Nepal’s Ilam region, this coffee bean emerges like a gem, crafted through the classic washed process, exuding a pure and elegant soul. This is the most traditional and revered processing method, a tribute to coffee’s true essence, delivering crystalline clarity, a clean mouthfeel, and perfect balance.

The Soul of the Bean

The heart of this coffee is Dipak Dahal, whose farm is nestled in the mountain-embraced village of Fikkal. Renowned for his meticulous farming techniques and keen eye for selecting ripe cherries, Dipak blends ancestral wisdom with an unrelenting pursuit of detail in every step of the washed process. Through close collaboration with the Home Beans team, each coffee cherry is meticulously processed, as if speaking for the terroir and culture of this land. Ilam’s high elevation and unique microclimate allow coffee cherries to ripen slowly amidst swirling mists, yielding denser seeds with layered, complex flavors. The terroir here seems tailor-made for the washed process, perfectly showcasing Ilam’s freshness and finesse, with each bean telling a story of the serene purity of the mountain forests.

The Magic of Processing

This bean undergoes the classic washed process, combining precise timing with pure mountain spring water to create unmatched clarity and balance:

  1. Selective Harvesting: Only fully ripened red cherries are handpicked and floated to screen out unripe or defective fruit, ensuring consistent quality.

  2. Depulping: Immediately after harvest, the skin and pulp are removed, revealing the bean’s pure core.

  3. Water Fermentation: Beans are soaked in clean water tanks for 24–36 hours, allowing the mucilage to naturally break down through fermentation.

  4. Thorough Washing: Post-fermentation, the beans are repeatedly rinsed with clear spring water to remove residual mucilage, preserving their pristine nature.

  5. Sun-Drying: The washed beans are carefully spread on raised drying beds in thin layers, gently turned multiple times daily to avoid harsh midday sun. The drying process takes 18–22 days until moisture stabilizes at 10–12%, locking in optimal flavor.

  • Aroma: Warm notes of peanut and almond, accented by a hint of fresh herbal fragrance, like a comforting breeze from the morning mist of the highlands.
